Large, extra large and jumbo, mostly brown eggs from hens that have the run of the farm every day. Eggs come in sturdy 3 x 4 biodegradable, recyclable box. For easy-peel hard boiled eggs make a tiny hole in the large end of the egg with a push-pin like is used on a bulletin board. Put eggs in a pan with cold water and salt. Bring barely to boil then turn heat down to just maintain temperature. Time for twelve minutes then rinse with cold water and ice.
