(And they're a great alternative for those who don't like cranberry sauce at Thanksgiving and Christmas.) Pearly Jackson was the pastry cook at Hotel Seville in Harrison in the early fifties. She gave my great-grandmother her recipe; we still have Pearly's handwritten copy. It's a tedious process but the result is one of my favorite things! (And they make great Christmas presents!) (Ingredients: Cucumbers, sugar, vinegar, water, Red Hots candy, red food coloring, cinnamon sticks and cloves. Pickling lime and alum used as firming agents. Red Hots contain Red Dye No. 40.)
