Quite a treat from my Kleo’s Kookie Korner. Kleo is alway amazing us with what she bakes. For a 14 year old just playing in the kitchen, she’ll surprise you. I love snickerdoodles, but this is next level! Think of a snickerdoodle, with more depth and richness, will not disappoint! She’s too young for a ‘real job’’, so she’d like to try her hand at selling her baked goods. Look for more goodies to come from her in the future. This girl has fashion to afford! Will this vegan chocolate chip cookie be the best cookie of your life? Probably not. But, will it be the best vegan one? Definitely. This recipe falls into the "firm edges, ooey gooey center, and a chewy bite sprinkled with flaky sea salt" category--which we humbly think is the best.

These lemon drop cookies are dairy-free and are inspired by my short stint working as a counter girl in a quintessential bakery in the northeastern state of Delaware. They made up the bulk of my daily lunch breaks, hehe! The base of the cookie is chewy and slightly dense, but not too heavy. The glaze has a tart lemon kick. The flavor of these cookies comes 100% from lemon juice and zest, no extract or oils.
