Our Oyster Mushrooms have a chewy savory umami flavor profile. They are grown in an indoor greenhouse under a controlled environment suitable for mushroom cultivation. There are many ways to cook an oyster mushroom and there is nothing wrong with making it simple! Here is our recipe: Sautéed Oyster Mushroom. Cook on medium heat for 3 minutes with butter, olive oil, garlic and thyme. For 1 minute, cook on high heat and add your spices of choice (we use chicken bouillon). Serve! The species of oyster mushrooms we grow will depend on the season. These can range from Blue Oyster, Pink Oyster, Brown Oyster, and King Oyster mushrooms.

A member of the mint family, it prefers full sun and grows 1-4 feet tall and wide. Blooms attract butterflies and hummingbirds and the leaves have a fragrance reminiscent of bergamot orange.

A crunchy cinnamon-flavored pickle (similar to spiced apple rings) that is great by itself or as a garnish any time of the year. (And they're a great alternative for those who don't like cranberry sauce at Thanksgiving and Christmas.) Pearly Jackson was the pastry cook at Hotel Seville in Harrison in the early fifties. She gave my great-grandmother her recipe; we still have Pearly's handwritten copy. It's a tedious process but the result is one of my favorite things! (And they make great Christmas presents!) (Ingredients: Cucumbers, sugar, vinegar, water, Red Hots candy, red food coloring, cinnamon sticks and cloves. Pickling lime and alum used as firming agents. Red Hots contain Red Dye No. 40.)

Our Pioppino Mushroom Grow Kit requires more care than our other beginner species like oyster mushrooms and lions mane. These mushrooms fruit best when they are in a cooler environment less than 70F. They also require a higher relative humidity, so setting up a humidifier with your grow kit may bring success, or even in a makeshift box with perlite and water. Colonize at room temperature only. Our Pioppino Grow Kit will come either half-colonized or fully-colonized. When you notice the white mycelium has covered the whole substrate, simply puncture a small opening on top of the bag, and fold it over as seen from the instructions below via the link.
