These lemon drop cookies are dairy-free and are inspired by my short stint working as a counter girl in a quintessential bakery in the northeastern state of Delaware. They made up the bulk of my daily lunch breaks, hehe! The base of the cookie is chewy and slightly dense, but not too heavy. The glaze has a tart lemon kick. The flavor of these cookies comes 100% from lemon juice and zest, no extract or oils.
